Cascade Hollow Distilling Company
Born just 40 years after the signing of the Declaration of Independence, George A. Dickel built a name for himself as a respected merchant in Nashville long before he ventured into whisky. But once he did, he quickly earned a reputation for crafting some of the smoothest spirits in the region. In 1878, when the Cascade Hollow Distillery opened in nearby Coffee County, Dickel saw an opportunity to take his passion for quality whisky to the next level. Following Scottish tradition, he proudly spelled whisky without an "e" and believed that spirits made in the colder months resulted in a smoother taste. This belief led to the brand’s famous slogan: "Mellow as Moonlight."To this day, George Dickel’s legacy lives on through a distinctive process that sets it apart—chilling the whisky before it undergoes the charcoal-mellow filtration known as the Lincoln County Process. This extra step creates an unmistakably smooth character, making George Dickel Tennessee Whisky one-of-a-kind.
